The Frying Scottsman!

Recently I was very generously given a new Le Crueset Dutch Oven as a present. Adri & I used it for the first time this past weekend – we made a delicious pork tenderloin. Here are some photos from its inaugural journey:

During the first week of April we took a trip to Portland to do some exploring. I was hoping to get more photos, but this is all I have to show for my efforts. We were there for three days, and we were able to do quite a bit of reconnaissance. We had dinner with Alex & Stephanie Rayburn Tilson (from MA!) and I had lunch with Will Fain (from Vassar!) at his lovely pizza establishment, Pizza Depokos. Here are the photos:
After my success with the yogurt, I thought I would try my hand at making Strawberry Jam. I found a recipe on reddit that looked good – here are the results. It turned out the hardest part was locating the Pectin – who knew it would be so hard to find Pectin in Brooklyn?
It turned out really well! Next time I will experiment with using less sugar….
In honor of St. Patrick’s Day, I thought I might whip up some Corned Beef. crockpot365.blogspot.com has a lot of great recipes, including a great one for Corned Beef with a Dijon marinade. Here is my attempt at that recipe:
I had meant to get a photo of the final product being plated, but I ate it all before I remembered! It was quite good.
I have recently started experimenting with making my own Yogurt. Turns out to be quite easy, actually. Here are some photos from my first attempt:
I have posted some photos from my trip to Holland on my Google+ page – click here to see them.
I also have some photos from the show itself – they look quite good, I think! Here is the link.
This past weekend I decided to give a new crock pot recipe a try, on Mike’s recommendation. Here is a link to the original recipe. It seemed to turn out well – here is some brief photo documentation:
The ingredients. I substituted tomato sauce for the Salsa, and I couldn’t find any “Mexican Seasoning” so I left it out.
Pork Roast!
Chopping the onion. That is not my hand. I swear.
Adding the BBQ sauce to the onion.
I used Dinosaur BBQ sauce for this dish – it was pretty good! Apparently they are based out of Syracuse, NY.
Then adding in the tomato sauce and the chili powder.
After it was mixed all together, it was ready to meet the meat – in the crock pot!
Ready for Action!
The recipe calls to be cooked on low for 8 hours – this is what it looked like after 2 hours.
After it was done, I pulled the roast out and began the pulling! Notice that I have opted for the traditional “Two Fork” method, rather than some of the more modern questionable methods. After I pulled the whole thing, I threw it back into the crock pot, where the cooking sauce awaited.
All that was left was to mix it all up and it was ready to go!
Delicious!
